Historical Background: Situated in the Sinello Valley, Guilmi is known above all for its sausage production, in particular the so-called ventricina. First historical mentions about this village date back to the 11th century, when it was under the rule of the monastery of St. Stefano. Quoted for the first time in 1012, when the church of St. Marco was given to the monastery of St. Stefano by Trasmondo II, count of Chieti, it passed during the following centuries under the Caldora and D’Avalos.
